In the top of the board view, click on the name of the database view, then click the "Edit view" button in the view menu.

In the "Group" menu, toggle on the "Color columns" option.
After you've enabled color columns, you can edit the colors of each column by clicking the three dots at the top of the column and selecting "Edit color". From here, you can choose a new color for the column from the color picker.
